Karen,
Starting in third grade, MP provides quizzes and tests to help you assess your child's progress through their work. Most studies follow the rhythm of five weeks of work (sometimes with small weekly quizzes, like in Latin) then one week of review. This review week includes a review lesson which leads up to a test. There is also a year's end cumulative test for most studies. When you get your curriculum, you can flip to the back of your teacher's manuals and see what she should know by the end of the year on these tests. I even like having the student look at the final exam. It's absolutely daunting at the beginning of the year, but with steady work, week after week, your child will master the material. And then at year's end they can be so proud of what they've mastered!
I know those aren't specifics, but I think you'll have all the answers in hand once you have your manuals.

Goals for 3rd grade?
We will be starting the 3rd grade package at the end of August. I was hoping to find out what the goals were for Latin, Intro to Comp, Lit guides, Science, History, and cursive.
For example by the end of our school year the student should have mastered:
Vocab for Latin?
Be able to write a paragraph for Intro to Comp etc
Knowing what my daughter should have accomplished by end of year will help me put this all together.
TIA
