I'm in my 3rd week using MP Jr.K and haven't found a lesson plan introducing the Alphabet Coloring Book am I using these as a supplement on my own and as a fun activity as it fits in to the Alphabet Letter that we are currently working on?

Yes, the coloring books are supplements, and you can use them as you have time. If you don't get to them, no big deal!
